Grandma's Striped Kalács

My grandmother's striped kalács always brings back the warmth of home, as the aroma of the cocoa stripes peeking out of the tender dough fills the kitchen.

Ingredients

For the dough

for an ~800–850 g kalács

Czelli Soft Kalács Flour Blend 500 g
Lukewarm milk 220 g
Whole egg 1
Soft butter 50 g
Cocoa powder + milk 2 tbsp + 3 tbsp
Chocolate chips / chopped chocolate 100 g

Instructions

1. Mix the flour thoroughly with the milk and egg. Once the dough starts coming together, add the soft butter and knead into an elastic, soft dough.

2. Divide it in two and knead the cocoa mixture (mixed with milk) into one half.

3. Let both doughs rise in a warm place until doubled.

4. On a lightly floured surface, roll each risen dough into a sheet about 40×30 cm (16×12 in), sprinkle with the chocolate, and place the other sheet on top. Roll it up tightly from the shorter side and place it in a baking tin (about 30×15 cm / 12×6 in).

5. Cover and let rest for about 20–25 minutes (the dough needs to rise again).

6. Brush with the egg, score the top (optional), and bake in an oven preheated to 180 °C (350 °F) for about 40–45 minutes until done.
