1. Rub the flour and butter together until crumbly, then add the water, herbs, and tomatoes. Knead into a dough with quick movements.
2. Cover and let it rest in a warm place until it visibly grows in volume.
3. Turn it out onto a lightly floured counter, roll it out to about half a centimeter (¼ in) thick, and cut into triangles.
4. Arrange them on a parchment-lined baking sheet, cover, and let them rest again for about half an hour — be sure to wait until they've grown again.
5. Bake in an oven preheated to 180 °C (350 °F) for about 10–15 minutes until golden brown.
